The U.S. Department of Agriculture (USDA) requires that all entities participating in the Child Nutrition Programs must comply with the current Food Code of the Food and Drug Administration (FDA). The Connecticut Department of Public Health (DPH) monitors food service establishments for compliance with the Food Code requirements.  

Most food establishments in Connecticut are required to have a Certified Food Protection Manager (CFPM) depending on their classification. The requirements for becoming a certified food protection manager in Connecticut include: 1) completing an approved food safety training program of at least eight hours; 2) passing an approved food protection manager certification exam with a score of at least 75 percent; and 3) renewing certification every five years by completing an approved recertification course or exam. Food service operations should contact their local health department for more information.
