Active Managerial Control (AMC)
What is AMC?
A simple proactive food safety management system (FSMS) used by food service operators to improve food safety in their establishments. It is built on 3 pillars: have policies that prevent violations from happening, have trained staff that know and practice the policies, and verify that the policies are being followed and work. The aim is to prevent violations from occurring in the first place and not just reacting to violations identified by the food inspector.
What are the benefits to use AMC?
The systems developed using AMC have not only helped operators standardize their business procedures, they also have resulted in improved inspections over extended periods of time. The Food and Drug Administration (FDA) found that fast food restaurants with well-developed FSMS had 66% less violations than operations without any FSMS. For full-service restaurants, those with well-developed FSMS had 58% less violations than those without any FSMS.
