Tracking Training Hours
School food authorities (SFAs) must track and document the annual training hours of all food service staff toward the professional standards requirements. SFAs may use any method as long as the tracking tool contains the required information.
Training activities entered on the SFA's tracking tool may include conference calls, live or prerecorded webinars, videos, online classes, training documents, and in-person training. Documented training activities must be a minimum of 15 minutes.
SFAs with a food service management company (FSMC) contract must ensure that the FSMC staff have the knowledge and skills to supply safe and nutritious meals that meet the meal requirements. The SFA must request documentation from the FSMC to show compliance with the annual training standards.
