A license is required from the Department of Consumer Protection to operate a bakery.
A bakery is defined as “a building or part of building wherein the production of breads, cakes, doughnuts, crullers, pies, cookies, crackers, spaghetti, macaroni, or other food products is made either wholly or in part of flour or meal, including all frozen or canned baked goods. All restaurants, hotels, private institutions, home bakeries, establishments operating doughnut-frying equipment and other similar places offering their products for sale, are included.”
The Department's Foods Division inspects and regulates bakeries in Connecticut.
